Gonnella Family rebel and Union Hotel maverick restaurateur Daniel Gonnella, was thinking one day, with indoor dining shutdown, how can we capitalize on the underutilization of our kitchen? Synchronistically, he read an article on \u201cGhost Kitchen\u2019s\u201d which have sprung up across the country as a way of utilizing existing restaurant kitchens excess capacity during Covid to increase sales. It reminded Daniel of a recent trip to visit his niece in Nashville and attend a Nascar race. <\/span><\/p>\n

His niece insisted that Daniel have a hot chicken sandwich, a staple of Nashville. It was the beginning of a love affair between Daniel and all things Nashville Chicken. Nashville is where Daniel also learned that in the South, mac and cheese is a vegetable. \u201cWe must bring Nashville Chicken Sandwiches home,\u201d exclaimed Daniel.<\/span><\/p>\n<\/div>

Daniel began doing research to perfect the Chicken Sandwich. He has been working with four chefs from his food purveyor US Foods and local chef consultant along with our own staff.<\/p>\n

Toward that end The Union Hotel family of restaurants welcome Hot Chix of Santa Rosa, our new Nashville chicken sandwich brand; Where Cali and Nashville Chix Hook Up. \u201cWe effectively now run two businesses out of our existing single kitchen: Hot Chix of Santa Rosa and Union Hotel Restaurant Santa Rosa,\u201d says Daniel.<\/p>\n
